Description

This fish is quick and easy. If your kids like fish sticks, they will LOVE this!

Ingredients

  • 4 pieces Cod, 6 Ounces Each
  • 2 pinches Salt And Pepper Per Piece Of Fish
  • 1 Tablespoon Butter, Melted
  • 1 Tablespoon Olive Oil
  • 1 Tablespoon Dijon Mustard
  • 1 pinch Cayenne Pepper
  • 1 cup Panko Crumbs
  • _____
  • FOR THE SAUCE:
  • ¼ cups Mayonnaise
  • ⅓ cups Plain Low-fat Yogurt
  • 2 Tablespoons Sweet Pickle Relish

Preparation

1. Line a cookie sheet with Reynold’s non-stick foil. Preheat oven to 400F.
2. Rinse cod and dry with a paper towel. Season with salt and pepper.
3. In a small microwavable bowl, add butter and olive oil. Microwave until butter is melted. Whisk in Dijon mustard and cayenne.
4. In a medium size bowl, add panko crumbs.
5. Using a pastry brush, generously coat each piece of fish with the butter mixture. Coat fish with panko, pressing crumbs into fish to coat. Place on prepared cookie sheet.
6. Bake for 15-18 minutes. While fish is baking, mix sauce ingredients together in a small bowl. Serve immediately. Enjoy!

This looks great – I’ll have to make this for my kids. Maybe I can get my picky daughter to eat it!

And to Carla – I bet you could substitute tilapia; I’ve made fish sticks with it before and it turned out fine.

Really good! Costco was out of cod, so we used sole instead.

We didn’t make the slaw, but the fish was delicious! Very easy, quick, and very little cleanup thanks to the foil. Thanks for a great recipe!

We used this for some mystery white fish that we’d acquired from somewhere and it was delicious! My husband and I aren’t huge fish eaters, but this was very tasty. We’ll definitely be having this again.
