A Pennsylvania Dutch tradition in my home is to serve this on New Years Day for luck in the following year. I don’t know much about luck, but I do know its comforting and delicious, especially served with a side of mashed potatoes and apple sauce.
Liberally season pork with salt and pepper. Sear the roast on top of the stove by heating a large saute pan until hot.
Pour in a little olive oil and sear on all sides until the roast is nice and brown, it usually takes about 2-3 minutes per side. You can skip this step if you like, but I find it adds more flavor.
After the roast is nice and seared remove it from the heat.
Add half the onions and apples to the bottom of the crockpot, season with a little salt and pepper.
Set the roast on top of onions and add the apples, the rest of the onion, and the kraut.
I like to pour the apple cider into the pan I seared the roast in and then scrape up any browned bits left in the pan. Pour the cider over roast. The liquid should cover at least half of your roast, Cover the crockpot and turn on low for 6 hours.

My family has made a similar recipe for many years. We use boneless pork ribs. We don’t brown them. We just salt and pepper them, put them in the crockpot, and layer the onions and apples on top. Pour over the kraut (If it looks dry, I add a little water) and turn the crockpot on. It’s great served right on top of mashed potatoes. Sounds weird, but it tasted great!

I made this last night and it was really good and sooo easy. My sister had two helpings:) Keeping this in my recipe box!

I have made a dish similar to this one: I put the sauerkraut, apples and onions on the bottom of the pot and cover it with a generous handful or two of brown sugar. I then place the pork roast on top and let it cook for 3 hours on top of the stove. You can use spare ribs as well, and it really is delicious. In fact, I am making this tomorrow since it has been really cold here in NJ this weekend. It’s a great fall/winter dish.

I made this for dinner tonight. We didn’t have any cider or apple juice, so I used a can of beer instead, and it turned out great. Soooo good. And it just has a taste that makes you think “fall”.
