I think we all know that cabbage and potatoes are part of the Irish food heritage. But, shrimp, or “prawns” as they are more often called in Ireland, are common in their diet too. I’m sure our regulars know that I’m a shrimp fanatic. So I thought I’d fix something in the crockpot in honor of the upcoming St. Patrick’s Day using shrimp instead of corned beef.
Chop cabbage into small wedges. Wash, but don’t peel potatoes, and cut them into quarters. Peel onions and cut them into 8ths.
Toss all ingredients except shrimp into a large bowl and toss until everything is coated with oil.
Spray your crockpot with non-stick cooking spray. Put mixture into the crockpot and cook on high for 3½ to 4 hours or until the potatoes are almost done. Add shrimp, stir and cook for 20 more minutes.
