Almonds, cream, orange marmalade, and Dijon mustard — who would have thought it would be so divine?
Saute almonds in butter; set aside.
Saute chicken in butter on both sides for 2 minutes until browned. Reduce heat to medium.
In a bowl, combine cream, mustard, marmalade, pepper, and mayonnaise. Add 1/2 cup almonds. Pour over chicken and cook for 10 minutes until thick.
Sprinkle with rest of almonds.
Serve over rice.

I saw this exact recipe in a Southern Living cookbook. I made it without the almonds and it was still magnificent.
**Hint: Mashed potatoes is better!
