Description

This is a casserole my mom has made ever since I was little and didn’t like spinach! My kids love it and there are never any leftovers!

Ingredients

  • 2 bags (16 Oz. Size) Frozen Spinach, Thawed
  • 4 whole Large Chicken Breasts
  • 1 cup Mayonnaise
  • 2 cans (10.75 Oz. Can) Cream Of Chicken Soup, Undiluted
  • 1 Tablespoon Lemon Juice
  • ½ teaspoons Curry Powder
  • 1 cup Grated Sharp Cheddar Cheese
  • ½ packages (4 Oz. Sleeve) Ritz Crackers, Crushed Into Crumbs
  • 3 Tablespoons Melted Margarine

Preparation

1. Press all excess water out of the thawed spinach (I used a colander).
2. Spread on the bottom of a greased 9”x13” baking dish.
3. Slice large chicken breasts into 2 fillets each.
4. Place chicken breasts on top of spinach.
5. Mix mayonnaise, soup, lemon juice and curry powder.
6. Spread on top of chicken.
7. Top with cheddar cheese and then cracker crumbs.
8. Sprinkle with melted margarine.
9. Cover with foil and bake at 350ºF for 1 hour.

The kids and I didn’t care for this one. Too much spinach for them, too much curry and mayonnaise for me.

I really wanted to love this recipe…I am not sure if its just me or what, but the lemon juice threw me off…I didn’t hate it…just didn’t love it, and for the calories and ingredients I need to love it to make it worth eating. With that being said if it were up to my 2 year old son it would have gotten 5 stars. He scarfed it and asked for more and normally I can’t get him to eat meat…so that says a lot!
