Description

Baked chicken covered in an herb cream sauce, then topped with bacon, mushrooms and tomatoes.

Ingredients

  • 4 slices Bacon
  • 4 whole Boneless Chicken Breasts
  • 1 teaspoon Salt
  • ¼ teaspoons Pepper
  • 3 Tablespoons Butter
  • 3 Tablespoons Flour
  • ½ cups Onion, Diced
  • 8 ounces, weight Baby Bella Mushrooms, Sliced
  • 14 ounces, fluid Chicken Broth
  • 4-½ ounces, weight Garlic Herb Cheese Spread (Alouette)
  • 2 whole Roma Tomatoes, Chopped
  • 1 pound Spaghetti

Preparation

Preheat oven to 350ºF.

Cook bacon in a large pan until crisp. Remove and set aside. Wipe all but 2 tablespoon of bacon grease from pan. Season chicken with salt and pepper and cook in bacon grease until browned. Remove and place chicken in casserole dish.

Add butter to pan; when melted, stir in flour. Add in diced onions and mushrooms. Cook about 1 minute.

Stir in broth and cheese spread. Continue to stir until smooth. Pour over chicken. Sprinkle with tomatoes and crumbled bacon.

Bake for 20-25 minutes.

Prepare pasta according to package directions. Serve chicken over pasta.

I am making this right now and couldn’t find the oven temp in our instructions… I am going to use 375. I may have overlooked it. Looks yummy! I am excited to try it…
