A twist to traditional enchiladas.
Prepare ground beef and taco seasoning according to package instructions. Spread 2-3 tablespoons cream cheese onto 6 tortillas, fold each tortilla in half. Fill remainder of tortillas with 3 tablespoons ground beef, sprinkle cheddar cheese and fold in half.
In a 13×9 casserole dish, spread 1/4 cup enchilada sauce. Place 4 tortillas in a single layer, alternating cheese tortillas and beef tortillas. Spread 1/4 cup enchilada sauce over the first layer and sprinkle with cheddar cheese. Repeat layers, being careful to alternate tortillas on each layer. Pour remaining enchilada sauce and top with cheddar cheese.
Cover with foil, bake at 375 degrees for 1 hour or until heated through and sauce is bubbling.

I’d love to try these tonight but all I have are the small fajita size flour tortillas. Any idea how many I should use? Thanks!
