Easy Ceviche, great for dinner, or an appetizer! Mix, refrigerate and serve.
Taste as you go, you may find you need more lemon juice, clamato tomato juice, tapatio, salt and pepper.
Mix all ingredients, and refrigerate for 2 hours (until chilled). I add the avocado last to make sure they don’t turn into mush.
