Description

Fancied up tartar sauce is slathered on a cornmeal cod sandwich!

Ingredients

  • FOR THE OLD BAY TARTAR SAUCE:
  • 1 cup Mayonnaise (Homemade Or Store Bought)
  • 2 Tablespoons Sweet Pickle Relish
  • 1 Tablespoon Grainy Dijon Mustard
  • 1 Tablespoon Chopped Pickled Jalapenos
  • 1 Tablespoon Freshly Squeezed Lemon Juice
  • 2 teaspoons Old Bay Seasoning
  • ½ teaspoons Dried Terragon (or 1 Tablespoon Fresh)
  • Kosher Salt And Black Pepper To Taste
  • FOR THE COD SANDWICHES:
  • 1 cup Yellow Cornmeal
  • 1 teaspoon Old Bay Seasoning
  • ¼ teaspoons Ground Black Pepper
  • 1 pound (give Or Take) Fresh Cod Fillets
  • ¼ cups Grapeseed Or Light Olive Oil, For Pan Frying
  • 6 whole Hamburger Buns
  • Sliced Fresh Tomato
  • Torn Romaine Lettuce

Preparation

For the Old Bay tartar sauce:
Combine all the ingredients except the salt and pepper in a bowl. Stir and season with kosher salt and black pepper to taste. Refrigerate until ready to use.

Use any leftover tartar as a dip for chips, french fries or onion rings (yum!).

For the sandwiches:
Combine the cornmeal with the Old Bay and black pepper.

Cut the fresh cod into equal pieces and dredge in cornmeal, pressing so it sticks to the fish.

Heat a large non-stick pan over medium heat and add oil. Cook a couple of pieces of fish at a time for about 2-3 minutes per side until fully cooked and flakes easily.

Spread a little of the tartar sauce on the bottom half of the hamburger bun, top with 2 pieces of cod. Top that with fresh sliced tomato, lettuce and the other half of the bun.

These were very light and absolutely delicious! I’ve never made a tartar sauce quite like this one, but it was full of flavor, and perfectly complimented the cod. Would highly recommend making these!
