A quick, one-pot meal that brings healthy to the table in no time at all.
Toss shrimp in old bay seasoning.
In a large cast iron skillet over high heat, add 1 tablespoon olive oil. Let heat about 30 seconds, and toss shrimp into skillet. Sear for 3 minutes and flip. Sear an additional 1 minute. Remove from skillet, and cover to keep warm.
Meanwhile cook pasta according to package directions.
In the same skillet, add remaining 1 tablespoon olive oil, onions, and garlic. Let bloom 2 minutes. Deglaze the pan with white wine. Scrape bottom and sides well. Add in chicken stock, smoked paprika, pepper, garlic powder, red pepper flakes, and salt. Turn heat to medium, and cover. Let simmer for 10 minutes.
Toss in corn, tomatoes, and mushrooms. Let cook about 10 more minutes. Give her a taste and adjust seasonings if needed.
Once veggies are cooked, drain pasta and add to skillet along with shrimp. Stir well to combine.
Serve in large bowls and top with Parmesan cheese and green onions. Enjoy!
