This is a hearty casserole that could also be served in smaller portions as a side dish this holiday season. Or use your leftover ham from a holiday meal! If your diet restricts ham substitute chicken or tuna and enjoy in your own way!
Preheat oven to 375 F.
Heat the margarine over medium-high heat in a large skillet. Add onion and garlic, sprinkle with salt and cook until soft. Add the corn and turn the heat to high. Stir and toast the corn until lightly browned. Don’t let it burn! Remove from heat and set aside when toasted.
Meanwhile, over medium heat in a saucepan heat the cream, milk and cream cheese and stir until blended. Then turn heat to low when blended, keeping it warm until the corn mixture is ready.
In a large bowl mix the cheeses, ham, cornmeal and flour. Add the groups of ingredients from the stove into the ham mixture at the same time and stir well.
Pour into a greased 9”x12” pan, smooth the top and bake for 30 minutes at 375 F.
