This is a recipe hack that competition barbecue teams use to get extremely tender skin on smoked chicken thighs.
Trim chicken thighs of excess fat and skin. Season the thighs liberally with the barbecue seasoning.
Add margarine to an 8×10 foil baking dish and spread evenly on the bottom. Place the chicken thighs skin side down into the foil pan. Smoke the thighs at 250ºF for 1 hour.
After 1 hour, remove the thighs from the pan and place them on the cooking grate skin side up. Reapply the bbq seasoning to the skin side of the chicken and add sauce if desired. Continue cooking the thighs until an internal temperature of 185ºF is reached.
