Easy to make and makes the kitchen smell wonderful. Comfort food in cold weather. This is basically dried lima beans cooked in onion soup with some add-ins. Don’t let the lima beans throw you—I hate them, but I like this dish.
Most of these ingredients are to taste. Wash and pick through the dried lima beans. Boil briefly in water to cover, dump the water, and put a couple quarts of water in the pan with the beans. Put to a boil again.
Meanwhile, chop the bacon ends and fry up the hamburger. As soon as the water comes to a hard boil, turn down to a simmer, or put in a crock pot. Add the bacon and hamburger to the beans and water. Add the rest of the ingredients, to taste. Keep your eye on the water level—towards the end of cooking, the beans soak up water quickly. You want a bit of water to make it a soupy, but this is not a soup.
