A perfect way to use those corned beef leftovers. Or just a great excuse to make a Reuben.
1. Heat a griddle over medium heat. Spray with cooking spray, and lay down 2 pieces rye bread. Top each piece with 1 tablespoon thousand dressing, Swiss cheese, beef, sauerkraut, and top with 2nd piece of Swiss cheese, the remaining bread.
2. Cook about 2 minutes, until bottom piece of bread is golden brown and cheese is starting to melt. Flip over, and cook an additional 2 minutes.
Cut in half and enjoy!
