This chicken salad is a quick and easy go-to lunch.
Divide the rotisserie chicken. Save the wings and legs for another purpose, and remove the skin from the breasts and thighs. Chop or shred breast and thigh meat and add to a large bowl.
Add the celery, red onion, dill, mayonnaise, Dijon mustard, lemon juice, salt, and pepper to the bowl. Mix until well combined.
Spoon chicken salad onto croissants and eat! Leftover chicken salad may be refrigerated for up to 5 days.
