Description

Chorizo pasta with tomatoes and cream: a perfect 30-minute meal.

Ingredients

  • 8 ounces, weight Pasta
  • 12 ounces, weight Smoked Chorizo, Halved And Thinly Sliced
  • ½ whole Small Onion, Diced
  • 3 cloves Garlic, Minced
  • 1 pint Cherry Tomatoes, Halved
  • ½ cups Heavy Cream
  • 2 whole Scallions, Diced

Preparation

Cook pasta according to package directions.

Over medium heat, heat a sauté pan and add chorizo. Cook 5-10 minutes or until slightly browned and crispy. Drain some of the grease.

Add onions and cook until translucent, 4-5 minutes. Add garlic and cook for 1 minute. Add cherry tomatoes and cook for 4-5 minutes or until juices starting to run.

Add cream and reduce heat to low. Simmer on low heat for a few minutes.

Serve sauce over the pasta and sprinkled with scallions.

I enjoyed this. I maybe would have liked it to have been a little creamier, but it was still delicious no matter what.
