Chorizo pasta with tomatoes and cream: a perfect 30-minute meal.
Cook pasta according to package directions.
Over medium heat, heat a sauté pan and add chorizo. Cook 5-10 minutes or until slightly browned and crispy. Drain some of the grease.
Add onions and cook until translucent, 4-5 minutes. Add garlic and cook for 1 minute. Add cherry tomatoes and cook for 4-5 minutes or until juices starting to run.
Add cream and reduce heat to low. Simmer on low heat for a few minutes.
Serve sauce over the pasta and sprinkled with scallions.
