Delicious on burgers or sandwiches, I made this to accompany my Kale & White Bean Burgers.
Finely mince 2 garlic cloves, sprinkle some kosher salt and smear against the back of a knife, so the garlic turns into a paste.
Place egg yolk, mustard and vinegar in a bowl. Whisk together. Slowly drizzle in olive oil, whilst whisking constantly, and stir in garlic, chives, honey and salt. Chill.
