Description

These Chipotle Chicken Croquettes are perfectly portioned and perfectly delicious!

Ingredients

  • FOR THE SPICY MUSTARD SAUCE:
  • 1 clove Garlic, Minced
  • ½ cups Light Mayonnaise
  • ½ cups Light Sour Cream
  • 1 Tablespoon Chipotle Mustard, Such As Saucy Mama
  • 1 Tablespoon Lime Juice
  • 1 teaspoon Mrs. Dash Southwest Chipotle Seasoning
  • FOR THE CROQUETTES:
  • 2 Tablespoons Butter, Divided
  • ⅓ cups Minced Red Bell Pepper
  • ⅓ cups Minced Orange Bell Pepper
  • ⅓ cups Minced Onion
  • 3 cups Chopped, Cooked Chicken Breast
  • 1-½ cup Whole Wheat Panko Breadcrumbs
  • ½ cups Light Mayonnaise
  • 2 whole Eggs, Lightly Beaten
  • 2 Tablespoons Chipotle Mustard, Such As Saucy Mama
  • 1 Tablespoon Worcestershire Sauce
  • 1 teaspoon Mrs. Dash Southwest Chipotle Seasoning
  • 1 teaspoon Seasoned Salt

Preparation

To make the sauce, whisk all ingredients in a small bowl and chill for at least an 2 hours before serving.

For the croquettes, melt 1 tablespoon of butter in a small skillet over medium heat. Add the minced bell peppers and onion and saute for about 5 minutes until tender.

In a large bowl, combine the chopped chicken, breadcrumbs and bell pepper mixture. Set aside. In a small bowl, whisk together the mayonnaise, eggs, mustard, Worcestershire sauce, seasonings and salt. Add to the chicken mixture, tossing gently to combine. Form the mixture into 10 patties.

In a large skillet, melt the remaining tablespoon of butter over medium heat. Cook the chicken croquettes until browned, about 3 to 5 minutes on each side and serve with spicy mustard sauce. Enjoy!
