Description

Tender, grilled top sirloin kabobs, infused with earthy chipotle marinade. Dipped in a bright and flavorful lime cilantro sauce.

Ingredients

  • FOR THE DIPPING SAUCE:
  • 1 cup Sour Cream
  • 1 teaspoon Cumin
  • 1  Lime, Juiced
  • 1 teaspoon Lime Zest
  • ¼ cups Chopped Cilantro
  • ¼ teaspoons Salt, Or To Taste
  • FOR THE KABOBS:
  • ¼ cups Fresh Lime Juice
  • 3 cloves Garlic (large), Minced
  • 2 Tablespoons (heaping) Chopped Chipotles In Adobo
  • ½ cups Quality Olive Oil
  • ¾ teaspoons Salt, Or To Taste
  • 2 pounds Top Sirloin, Cut Into 1-inch Cubes

Preparation

Mix sauce ingredients and refrigerate so the flavors can meld.

Mix fresh lime juice, garlic, chipotles, oil, and salt in a gallon-sized resealable bag. Add the meat and refrigerate. Marinate beef for a minimum of 30 minutes, preferably longer.

Meanwhile, soak some wooden skewers in water for about 30 minutes.

Preheat an indoor or outdoor grill to medium or medium high, depending on your flame source. Remove marinated beef from the refrigerator and stab 4 beef cubes per skewer, leaving some length at the base to act as a handle.

When the grill is hot, cook the beef skewers for about 3 minutes per side for a medium result. Serve warm with the chilled dipping sauce.

Scrumptious!! Great flavors. I substituted plain yogurt for the sour cream and it worked well.
