My wonderful mom used to make this a lot when I was growing up. It has always been one of my favorites. I just love the way the chili seasonings taste with the spaghetti and the grated cheese! This is a very simple and healthy meal your family is sure to love.
Heat the olive oil in a large pot over medium heat. Sauté the onion until tender, and then add the garlic and cook for about 30 seconds.
Add the bell pepper and zucchini. Cook for about 3-4 minutes until crisp-tender.
Throw in the mince and stir around a bit.
Throw in the sliced mushrooms and cook until they begin to soften, but have not broken down.
Throw in the beans and tomatoes and cook for another 1-2 minutes.
Stir in the sauce, then season to taste with salt, pepper, a little bit of chili powder and lots of ground cumin. Heat through and serve over spaghetti. Garnish with grated cheese.

@ Blovedone: No, it’s a vegetarian ground meat substitute. You can usually find them in the freezer section of your grocery store, where they keep the vegetarian burgers, etc. Sorry for the confusion!

This sounds wonderful, but I’m not understanding what you refer to as “•6 ounces, weight Vegetarian Mince” is?
Could this be diced mixed vegetables?
