I love Chinese food and can go for it at any time. Stir-fry noodles are my favorite, although sometimes I like fried rice, too. I usually make both when I have nothing planned or I am not in the mood to cook long hours. In both of the recipes you don’t have much to do, just throw some ingredients together and it will turn into a tasty dish.
Boil noodles as the instruction on the packet says. Do not boil it too much, make it about 80% done. Once it is done, drain the water, spread it on a flat surface, and toss it with 1 teaspoon of oil so that noodles will not stick to each other.
In a pan, add remaining oil. When hot, add chopped garlic and fry it till garlic starts to lightly color. Add vegetables and salt. Sauté in the hot oil till half-cooked; do not overcook them.
Add soya sauce and oyster sauce to the vegetables and give it a quick mix. Add Szechwan sauce (or chili garlic sauce) and mix the vegetables well.
In another pan, scramble the beaten eggs. Add the scrambled eggs and boiled noodles to everything and mix it well. You want the noodles well-coated with sauce. Sprinkle some Chinese salt and mix it well.
Now the noodles are ready to serve. You can serve them with some chicken or vegetable Manchurian or your favourite soup. I love to eat this with hot and sour soup.
