Description

Chickpea Avocado Sandwich is a healthy, quick and easy lunch option. Chickpeas are my favorite legume. I love their creamy texture. This is one of the most simple and easy lunches I have ever made.

Ingredients

  • 15 ounces, weight Canned Chickpeas Or Garbanzo Beans (washed And Drained)
  • 1 whole Avocado, Peeled And Pitted
  • 1 sprig Cilantro, Chopped
  • ½ whole Onion, Chopped
  • 1 whole Tomato, Chopped
  • 2 whole Green Chilies, Chopped
  • 1 whole Lemon, Juiced
  • 1 teaspoon Salt
  • ½ teaspoons Ground Black Pepper
  • 8 slices Bread (Use Any Bread You Like, I Used Multigrain Bread)

Preparation

In a medium bowl, mash the chickpeas and avocado together. Add in cilantro, onion, tomatoes, green chilies and lemon juice. Season with salt and pepper, to taste.

Spread avacado spread on a slice of bread and dig in. It’s deliciuos and healthy. You could also grill your sandwich you wish.
