Pan seared chicken with mushrooms, wine and goat cheese. Very tasty. Usually served with herb roasted baby potatoes.
Heat oven to 400 degrees.
Heat oil in a frying pan. Salt and pepper chicken well and fry about 6 minutes per side in oil. You want to get a good brown crust on each side of the chicken so leave it alone and don’t be messing with it!
Remove the chicken and put in a dish in the oven to bake. Add a tad bit of butter to the pan (or not if you still have enough oil, but I do like butter).
In the frying pan, add mushrooms and onions, cook for 5 minutes.
Add wine and cook down for one minute until its evaporated mostly.
Add chicken broth and tarragon to frying pan and cook until thicker and a little more evaporated.
Remove chicken from oven and set aside.
Add goat cheese and season with salt and pepper. Cook until goat cheese is melted and sauce is thick.
Add chicken back to pan and turn to coat in sauce. I have served this with either brown rice, or herb roasted baby potatoes.

this is the kind of simple, basic dish i like to order out, but never think to make at home, minus the tarragon, no sir, not happening. but thanks for the inspiration, FF, looks doable!

OMG this sounds so good! I’m going to make this for my son (he absolutely adores goat cheese anything!) when he comes home from college the first time so maybe he’ll never leave again!
