A healthy seared chicken breast topped with a garlicky mix of tomatoes, spinach and onion
Heat 1tbsp olive oil in a skillet over medium heat. Add chicken breasts and cook through.
In a small saucepan or small skillet, heat remaining 1tbsp olive oil over medium-low heat. Add spinach, onion, tomato and garlic and saute until the spinach is slightly wilted and the mixture is hot.
To serve, spoon spinach mixture over the top of the chicken breasts. Alternately, you can butterfly the chicken and, once the chicken is cooked through, stuff it with the mixture.
Delicious served on a bed of couscous!
