This delicious mix of noodles, chicken, cream sauce, butter, Ritz crackers and more is one of my favorite dishes. This has been a crowd pleaser where I’m from for years!
Boil the chicken breasts on the stove in water until cooked through (45-60 minutes). Cool chicken and cut into bite-sized pieces. Set aside.
Cook spaghetti noodles on the stove according to the box directions with salt and olive oil in the water. Drain noodles.
In a 9×13 pan, combine cooked noodles, 1/2 cup butter, drained mushrooms, chopped onion, and lemon juice. Put pan in the microwave for 2-3 minutes or until butter is melted.
Mix the flour, paprika, salt, nutmeg, and chicken broth in a saucepan on medium heat, stirring constantly until thick and smooth. Pour over the noodle mixture.
Take cooled and cut chicken and mix with the half-and-half. Pour into the pan with the noodle mixture. Mix together in the pan. Sprinkle parmesan cheese, mozzarella cheese and a little paprika on the chicken noodle mixture.
Crush 2 packages (see note below) Ritz crackers on top and pour the melted butter on top of the crackers. Bake at 350 degrees for 45- 60 minutes.
Note: when I buy a box of Ritz crackers, it comes with 3-4 brown packages or sleeves of crackers. When I say 2 packages, I mean 2 of those, not 2 boxes! Hopefully you knew that …
