Chicken stir fry and rice rolled up like sushi.
1. Put rice and cooking liquid in a rice cooker or pot and cook according to directions, about 45 minutes.
2. Thinly slice the vegetables.
3. Cut chicken breast into thin strips.
4. Heat a large skillet coated with sesame oil.
5. Place the chicken in pan and season with salt and pepper. Cook thoroughly.
6. Add vegetable, beginning with the ones that take longest to cook. Season with pepper, garlic, and soy sauce to taste.
7. When rice is done cooking, add sugar and rice wine vinegar. Mix well.
8. Place nori on a bamboo rolling mat and spread a thin layer of rice on the nori.
9. Place some of the cooked chicken and vegetable mixture on the rice.
10. Roll tightly, slice, and serve.
