Description

I just created this casserole dish this week, in fact this is the first recipe that I’ve actually ever written in my life! I usually adapt borrowed recipes. So I have to tell you I’m a little intimidated by all you great foodies and photographers out there but you’ve also inspired me to give it a try. I asked my hubby for his opinion and he said “Don’t change one thing” but I welcome any suggestions you may have.

Ingredients

  • 5  Chicken Sausage Links
  • 4 Tablespoons Olive Oil, Divided
  • 1  Large Onion, Chopped
  • 8 ounces, weight Cremini Mushrooms, Sliced
  • 2 Tablespoons Flour
  • ¾ cups Dry White Wine (or Chicken Stock)
  • 4 Tablespoons Prepared Red Pepper Spread
  • ⅓ cups Yellow Or Red Roasted Red Peppers
  • 2 cups Cottage Cheese
  • 8 ounces, weight Monterey Jack Cheese, Shredded
  • 1 cup Shredded Parmesan Cheese, Divided
  • 2 Tablespoons Parsley, Finely Chopped
  • 8 ounces, weight Egg Noodles (or Pasta Of Your Choice)
  • 1 Tablespoon Basil, Cut Julienne

Preparation

For the sausage and vegetable sauce:

Slice the chicken sausage links on an angle about an inch thick. Heat skillet over medium heat with 1-2 Tablespoons of olive oil and brown the sausage (about 5 minutes). Remove sausage from skillet and set aside.

Heat the rest of the olive oil in the same skillet, add onions and mushroom and cook until tender. Sprinkle in flour then whisk in wine (or chicken broth). Bring to a bubble then reduce heat to low. Mix the red pepper spread and sausage into the vegetable sauce and simmer.

For the cheesy noodle mixture:

In a bowl mix together the roasted yellow/red peppers, cottage cheese, monterey jack cheese and 1/2 cup of the parmesan cheese, and parsley. Set aside.

In a medium pot, boil the pasta to al dente (according to package instructions for al dente). Drain, then pour the noodles into the cheese bowl and stir together to slightly melt the cheese.

Preheat broiler on low.

To assemble place the sausage and vegetable sauce in the bottom of a greased baking dish then pour the cheesy noodle mixture on top. Spread the rest of the parmesan cheese on top. Broil until cheese browns (about 5 minutes). After cooling a bit, sprinkle with basil.

Thank you! I had never heard of prepared pepper spread until we recently got a Trader Joe’s in our city and that’s where I found it. But I have seen different variations of it at other grocery stores near the olives and pickles. It’s basically pureed red peppers with spices. The label says you can use it to add flavor to sauces and chili. Since I had some on-hand I threw it in the mix. :)
