Delicious and filling, this is one of my all time favorite meals. It is quick and easy to put together, especially if you have pre-cooked chicken (or canned!) on hand.
If needed, cook and chop/crumble chicken and sausage.
In a 13×9 pan combine chicken, sausage, and celery.
Cover with the uncooked rice. Sprinkle with onion and garlic powder.
Combine water and Cream of Chicken soup. You want it to equal about 2 cups (and maybe a little more), so add more water if necessary.
Pour soup mixture over ingredients in the pan. Cover pan with tinfoil and cook at 350 degrees for 1 hour.
Remove from oven and immediately sprinkle with the shredded cheese. Replace tinfoil and let it sit about 5 minutes, or until cheese is melted.

Sadly, I did not have enough cheese around when I made this. (I know…an abomination!) However, it was incredibly easy to prepare and a recipe I will keep on hand. I know I’m not supposed to play with recipes on the first trial, however, I couldn’t resist adding 1/2 c sliced carrots with the celery. A great assemble and forget about it recipe.

Does it matter what kind of rice? I think this sounds wonderful for my meat-and-potatoe eaters!! I’ll post a review when I make it!
