My Mom made this all the time when we were younger. I remember being soo excited when she would tell us we were having it for dinner. It’s been passed down from her Mom, who didn’t make it in a slow cooker, obviously, but some changes are good! I love that I can prep this quickly in the morning, dump it in the crock pot, and dinner is ready when I get home! Delish!
Allow chicken to thaw if frozen.
Prep: Season chicken with salt, pepper, garlic powder.
Slice sausage into 1-inch pieces.
Cook: Place okra at the bottom of the slow cooker/crock pot. Place seasoned chicken on top. Follow with Rotel and diced tomatoes. Next, place sausage on slow cooker and pour stewed tomatoes on top. Set slow cooker on low for 6-7 hours, or longer, it’s been done before and it was still delish.
When you are ready, cook rice according to package instructions. Serve over rice. Enjoy!
