All the best aspects of a really great chicken parm wrapped up in a little meatball!
Preheat oven to 375 F.
In a large bowl, combine the chicken, onion, garlic, egg, 1/4 cup of the breadcrumbs, parsley, Parmesan, salt and pepper.
Place the remaining 1/2 cup of breadcrumbs in a shallow dish.
Using a 1 ounce scoop or your hands, scoop balls of the meat mixture. Put each ball into the breadcrumbs and roll around to coat. Transfer the balls to a rimmed baking sheet lined with parchment paper and bake in a 375 F oven for 30 minutes. Remove from oven and set on a rack.
Add the tomato sauce into a large pot on the stove and bring to a low simmer. Add the meatballs, cover the pot and leave on low for 30 minutes.
When ready to serve transfer the meatballs into an oven safe dish, top with the mozzarella cheese and broil for a few minutes until the cheese has melted. Serve over your favorite pasta.
Makes approximately 4-6 servings.
