Description

It’s like chicken parmesan in a sandwich!

Ingredients

  • 10 slices French Bread (4 Inches In Diameter, 1/2-inch-thick); 8 Whole Slices To Toast, 2 Slices (crust Removed Then Diced), Divided Use
  • ½ cups Finely Grated Parmesan Cheese
  • 4 Tablespoons Minced Fresh Basil, Divided
  • ¾ cups Marinara Sauce (purchased Or Homemade)
  • 12 ounces, weight Ground Chicken Breast
  • 1 Tablespoon Grated Onion
  • ¼ teaspoons Salt
  • 1-½ Tablespoon Oil
  • 4 ounces, weight Mozzarella Cheese, Thinly Sliced
  • 2 Tablespoons Butter, Softened
  • 4  Large Spinach Leaves
  • 12 whole Large Basil Leaves

Preparation

Blend diced bread and Parmesan cheese using a food processor. Pulse until you have fine crumbs. Transfer the crumbs into a pie dish and mix in the 2 tablespoons of minced basil. Set aside.

Mix marinara and the remaining 2 tablespoons of minced basil in a small saucepan and set aside.

Transfer 1 1/2 tablespoons of the sauce into a large bowl. Add chicken, onion, and salt. Sprinkle with pepper to taste and blend. Shape into four 1/2-inch thick patties. Coat the patties with the crumbs.

Heat sauce over low heat.

Heat 1 1/2 tablespoons oil in a large nonstick skillet over medium heat. Cook patties until the bottoms are crusty, 4 minutes. Turn patties over and top with cheese. Cook 3 minutes then cover the skillet and cook until the patties are cooked through and cheese is melted, about 1 minute longer.

Butter the bread slices and toast them on a griddle over medium heat until they are your desired color.

Assemble burgers with bread, spinach leaves, basil leaves, and warm marinara piled on top of each chicken patty.
