When there is no time to make a traditional Chicken Mole, this crockpot recipe will do the trick.
Place the onion, raisins, garlic, sesame seeds, chipotle pepper, peanut butter and crushed tomatoes in a slow cooker.
Stir in the sugar, cinnamon, chili powder, cumin, nutmeg, cocoa powder and cilantro.
Place the chicken in the sauce, making sure to cover entirely with the sauce.
Cover and cook on high until chicken is very tender, about 3 1/2 hours.
Using 2 forks, remove the chicken to a plate or cutting board and shred the meat. Stir the shredded meat into the sauce and serve with tortillas.

ecourtney, I’ve never tried it without peanut butter, but I’ve always heard great things about “soy nut” butter and sunflower seed butter. I think those would be interesting to try and am sure they would be fabulous.

Oh man! I just put this in the slow cooker, so I obviously haven’t tasted it yet – BUT! If it tastes half as good as it smells now, this is going to be a win!! I’m planning to serve it in butter lettuce cups for a low carb option…hope it works.

Could this be made without the peanut butter and sesame seeds? My son has a nut allergy. Just leave it out or replace it with something? Looks delicious… always looking for new recipes!
