Description

Italian heaven on a plate. I came up with it, so it doesn’t have a ‘real name’ but it is too good to not pass on!

Ingredients

  • 3 whole Boneless Skinless Chicken Breast, Cut Into Cubes
  • 4 cans (14.5 Oz.) Red Gold Roasted Garlic And Onion Tomatoes
  • 1 cup Fresh Sliced Mushrooms
  • 3 cloves Minced Fresh Garlic
  • ½ cups Minced Fresh Onion
  • 1 cup Dry Red Wine
  • Basil, Oregano, Rosemary To Taste
  • Fresh Parmesan Cheese
  • Pasta Of Your Choice

Preparation

In a large skillet, heat olive oil.

Add chicken breast and mushrooms and sautee until done.

Add garlic and onion and cook for about 2 minutes. Pour in red wine and scrape to get all the yummy stuff off that has stuck to the bottom.

Add tomatoes, give it a big old stir, then pour a glass of wine for yourself! After about 15 minutes of good bubbling and cooking, check spices. Add basil, oregano and rosemary to suit your taste. Let cook for another 30 or so minutes on medium heat to allow the soupiness to cook down a bit.

While that is getting all yummy and tasty, boil your favorite pasta al dente. We like penne, but have used anything and everything at one time or another!

Serve chicken/tomato goodness over pasta with a nice sprinkling of fresh cheese.

Can’t forget the garlic bread, salad, and of course, the rest of that bottle of wine!
