Enchiladas with a lot of kick (if you’re into that, of course). One of my husband’s favorite meals, ever!
Preheat oven to 350 degrees. Heat some oil in a large skillet. Add onion; cook over medium-high heat for 4-5 minutes or until tender. Add chicken, 1/2 cup of cheddar cheese, salsa, green chiles and cream cheese. Heat and stir for 2-3 minutes until cheeses are melted.
Spoon about 1/3 cup of the chicken mixture down the center of each tortilla; fold and place fold side down in a 9×13 baking dish. Drizzle the jar of green enchilada sauce on top of the tortillas. Sprinkle remaining cheddar cheese over green sauce. Cover dish with foil and bake for 15-20 minutes or until heated through and cheese on top is melted.
Makes 4 servings if you’re famished, 6 servings if you’re just hungry like normal. Make sure you have sides of salsa and sour cream to top with.
