Super easy recipe for chicken enchiladas, can be made all from scratch, or all from a jar. I prefer the jar…
Preheat oven to 350
Saute onion in butter until soft.
Add chicken and 1 cup salsa – stir until warm.
Remove chicken mixture from heat, and add 1 cup cheese – stir to combine.
Divide chicken mixture evenly among tortillas, and roll.
Place rolled enchiladas in a greased 8×8 casserole dish. Cover with remaining salsa and cheese.
Bake 15-20 minutes or until cheese is melted and starting to brown.
*Serve with any of your favorite taco toppings – olives, sour cream and guacamole are my favorites!
