Chicken and broccoli casserole with cheese—what’s not to love?
Put the chicken broth, cream of mushroom soup, and cheese in a 2-quart microwave-safe casserole dish, and microwave on high in 2-minute increments until the cheese is melted and will incorporate into the soup when stirred.
Add the chicken, broccoli, and 1/2 the stuffing (1/4 of the total package) and mix well.
Top with the remaining stuffing and bake at 325F for 30 – 45 minutes, until the cheese starts to bubble through the topping.
Let it cool for 15 minutes before serving.
It’s even better the next day!
