This classic family favorite is a great way to get picky eaters to eat their broccoli.
Heat oven to 450 degrees. Spray a 9 x 13 casserole pan with nonstick spray.
Rinse chicken and pat dry with paper towels. Cut into 1-inch cubes and spread evenly in a single layer in the dish. Salt and pepper the chicken and sprinkle with garlic power, using more or less to your liking.
In a microwave-safe bowl, stir together cream, broth and Dijon mustard. Microwave until just beginning to boil, about 8 minutes. Stir in the rice and pour over the chicken.
Bake uncovered for 20 minutes. Remove from the oven and stir in the broccoli and cheese. Top evenly with cracker crumbs and return to the oven for 10 more minutes, until crumbs are golden brown and the sides are bubbly.
