Juicy Chicken Burgers with Caramelized Onions and Apples
In a saute pan, add oil and butter, and heat on medium-low heat until butter melts. Add onions and apples. Cook covered for 10 minutes (medium low heat). Remove lid, and cook uncovered for 25 minutes or until onions are caramelized and golden brown. Add the vinegar and a dash of salt and pepper, and bring to a boil, until vinegar almost disappears, about 2 minutes. Then remove from heat and set aside.
In a medium sized bowl, add chicken, cheddar cheese, green onions, brown rice, egg, 2 Tablespoons of maple syrup, salt and pepper. Mix until well blended. Shape into 4-6 patties.
You can cook these in two ways:
1.) On the grill over medium heat. This is the healthier option, but the chicken will slightly dry out.
2) Add vegetable oil to a saute pan, and heat over medium heat.
Either way, cook patties until slightly browned on both sides (about 5 minutes per side). The stovetop method will result in a juicier burger, since much of the fat is trapped in the burger. I’d suggest this way, if you have a meatosaurus at home. They might not even be able to tell the difference between chicken and beef!
In a small bowl, mix the yogurt, 2 Tablespoons maple syrup, and dijon mustard.
To assemble, spread the yogurt mix on one half of the bun. Top with burger, then add blue cheese to taste, followed by the onions. It would truly be heavenly with bacon. I’m just saying.
