I was having a broccoli cheese craving one night and raided everything I had in my pantry that was broccoli cheese related and threw it into a pan.
Preheat oven to 350 degrees.
Cook Rice A Roni according to package instructions.
While rice is cooking, flatten chicken breasts on waxed paper and cut in halves. Heat some olive oil in a skillet and cook chicken breasts on medium heat for about 5-6 minutes on each side. Remove from heat.
Steam broccoli for about 5-10 minutes.
Place chicken in a 9 x 13 glass baking dish. Spread broccoli evenly over the chicken. While the rice is still in the pan, pour broccoli cheese soup and milk into the rice and mix well. Pour mixture over the chicken and broccoli. Crush the saltines and spread over the top of the casserole.
Place in the oven and bake for 25 minutes.

I made this yesterday for a potluck dinner. I chunked the chicken breast into bite sized peices before lightly cooking so it would serve more. I used buttered cracker crumbs for the topping. It was delicious! I worried about it being overly cheesy, but it was perfect. I got a lot of compliments on it, so I’ll make it again for a garden club luncheon this month. Two thumbs up!
