Chicken with a creamy white sauce on top of spinach.
Melt the butter in a small saucepan. Add the flour and cook on low heat until it has a nice tawny color. Add milk, and stir constantly until it comes to a bubble. Set aside.
Preheat oven to 350 degrees.
Pour a ladleful of basic white sauce over the bottom of a casserole dish. Top evenly with spinach, then half of the cheese, then sauce, then chicken, then the rest of the cheese, then the rest of the sauce. Bake covered until chicken is done, about one hour.
Twenty minutes before the dish is done, make rice according to the package directions, about 2 cups of rice to 4 cups of water.
Serve chicken and spinach and sauce over rice.

I use better than bullion now in my sauce and that gives it that extra salt that it really does need.

I made this for dinner last night. Super easy and tasty. The only thing it’s missing is a really good dose of salt and pepper. I think I’ll use it in the white sauce next time as well as seasoning the chicken with it before it cooks.
