A different twist on traditional Filipino Chicken Adobo using sweet soy sauce. This can be served as a main course or appetizer.
Rinse chicken thoroughly then transfer to a cooking pot. Add oil, peppercorns, garlic, bay leaves, ginger root, soy sauce and vinegar. Bring to a boil over medium heat. Lower heat then simmer for 10 minutes. Stir so that chicken wings are evenly coated with sauce on all sides. Cover then continue to simmer for 40 minutes, stirring occasionally. Stir in water, cover and continue to simmer on low for 10 more minutes. Remove from heat then transfer to a serving platter. Serve with rice or as an appetizer.
