A healthier alternative to using breadcrumbs or panko. Chia seeds have so many benefits and using them as a crust is quite easy. I’ve only used them on fish so far, but I’m sure it would be great on chicken too. I used a Cajun seasoning mixed in with the seeds to give the fish more flavor. Enjoy!
This recipe can pretty much be “eyeballed” and adjusted to your needs. I normally don’t measure anything out when I make it, I just eyeball it as I go along.
In a skillet over medium heat heat a thin layer of oil. While that is heating up, put your egg in one bowl and the chia seeds and seasoning blend in another. Season your fish with salt and pepper. Dredge the fish in the egg, then in the chia seed mixture, making sure to coat both sides. Place fish in the oil. It takes about 5 minutes to cook on each side, depending on how thick your fillets are. Mine were pretty thin so it didn’t take long at all. You’ll know they are done when they can be easily flaked. Be careful flipping them, I almost always break mine.
Serve with veggies and brown rice.
