Kind of like a quiche and shepherd’s pie mixed. It has a yummy potato “crust” filled with cheese, eggs, broccoli and ham. The potato crust also has nutmeg, which is an amazing compliment to broccoli. Comfort food. Yum.
Peel and cube potatoes into 1″ cubes. Put in large sauce pan with water (I always add onion, garlic and salt to water). Boil until fork tender. Drain.
Mash potatoes and add butter, salt, pepper and nutmeg. (You can also add a bit of milk if potatoes are dry).
Spread 2/3 of potatoes into sides and bottom of greased 8×8 or 9×9 baking dish. Set aside.
In a bowl, combine cheese, ham, broccoli and onion. Spoon into baking dish with potatoes.
Beat eggs and then add milk. Pour over broccoli and ham. Spread other 1/3 potatoes over top and sprinkle with paprika.
Bake at 400 degrees for 50-55 minutes. Potatoes will puff up and eggs will be completely cooked through.
