Pancake batter + spicy chicken = yum!
Preheat oven to 400 degrees. Spray an 8″ square pan with cooking spray. Mix the Bisquick, water, and egg in bowl. Spread the mixture in the pan. Sprinkle 1 1/4 cups of the cheese over the mixture in the pan. Set aside.
Cook and stir the chicken in the oil in a stove top pan over medium high heat, until the chicken is no longer pink. Drain off the remaining oil. Place the pan back on the stove and stir in the salsa, stirring the chicken and salsa together until the salsa is heated.
Spoon the chicken salsa mixture on top of the batter in the 8-inch pan you put together earlier, leave a 1/4-inch border of batter around the edges. Bake for 23 minutes or until the edges are dark golden brown. Sprinkle with remaining cheese and put it back in the oven until the cheese melts. Loosen from the sides of the pan and serve.

Tried this last night, tasted great! I added some sour cream on top, which gave it even more flavor! Thanks for the recipe!

This was really good. Everyone love it (even the picky preschooler). Next time though, I’ll make a double batch. It was only enough to feed myself, a 15 year old, and a 3 year old. I served it alone though, so maybe with other sides it would have stretched further. Will definitely be adding it to my rotation. Thanks Sarah!
