Description

Lean turkey is perfect to stuff with ooey, gooey cheese. The sweet caramelized onions and pickled burger sauce are a great complement to these melty and delicious burgers.

Ingredients

  • FOR THE CARAMELIZED ONIONS:
  • 2 whole Large Onions, Sliced
  • 1 Tablespoon Olive Oil
  • ¼ teaspoons Garlic Salt
  • 1-½ teaspoon Italian Seasoning
  • Salt And Pepper, to taste
  • FOR THE BURGERS:
  • 1 pound Ground Turkey, Up To 1/2 Pound More For Really Big Burgers
  • ⅓ cups Bread Crumbs
  • 1 whole Egg
  • 1 teaspoon Italian Seasoning
  • ½ teaspoons Garlic Salt
  • ¼ teaspoons Salt
  • ½ teaspoons Pepper
  • 4 slices Your Favorite Cheese, For Stuffing The Burger
  • 4 whole Hamburger Buns
  • FOR THE PICKLE BURGER SAUCE
  • ½ cups Mayonnaise
  • 1-½ teaspoon Dijon Mustard
  • 3 Tablespoons Dill Pickles Or Cornichon, Diced Fine

Preparation

For the caramelized onions:

1. Put all the onion ingredients into a skillet over medium heat.

2. Cook over medium heat for 30 to 45 minutes, turning the heat down to low if necessary. The onions should be soft and a dark caramel color when done.

3. Turn the heat off and set to the side until you are ready to use the onions, they can be kept at room temperature for a few hours.

For the burgers:

1. Put all of the ingredients for the burgers (everything except the cheese) into a bowl and mix completely.

2. Make 8 equal sized balls. Set them aside.

3. Prepare the cheese. I used Swiss cheese slices (like for sandwiches) then cut the slices cheese into four squares and stacked them up, there should be 4 stacks of cheese. I also used a slice of brie or Camembert off of the wheel, then cut that slice into two 1 1/2 inch slices.

4. Place one ball of the turkey meat in the palm of your hand.

5. Place either one stack of cheese, or two of the 1 1/2 inch slices of brie onto the ball of turkey in your hand, nestle the cheese into the meat slightly.

6. Place another ball of turkey meat on top of the cheese. Press down and form a patty, being sure to seal the edges of the patties together to seal in the cheese. Repeat with the remaining meat and cheese.

7. Place the burgers either into the freezer for 30 to 45 minutes; or into the refrigerator for no less than 1 hour. This is so they won’t fall apart when you cook them.

8. When you are ready, cook the burgers on the grill over a medium flame, for 8 to 10 minutes each side; or in a heavy bottom skillet over medium for 7 to 10 minutes on each side. If you use the stovetop method, put a lid over the skillet while the burgers cook.

9. Serve the burgers on toasted buns with caramelized onions and pickle burger sauce.

For the pickle burger sauce:

1. Mix all the ingredients in a small bowl.

2. Enjoy on top of burgers and sandwiches.
