This hearty comforting casserole will really please your family. Perfect for the cheese lovers in your family.
In a skillet, saute onion and green pepper in butter till soft. Remove from the heat and stir in the soup, mushrooms, pimentos and basil. Set aside.
In a large bowl, combine the noodles, chicken and cheese. Stir well to make sure you have evenly distributed the ricotta then add the soup mixture and combine well.
Transfer to a greased 13×9 baking dish. Bake uncovered at 350 for 45 min. or until bubbly. Sprinkle with the buttered bread crumbs and cook for an additional 15 min.
Serve with a nice salad and some crusty bread and enjoy! If you have leftovers they are killer.

We really liked it – it’s a good, easy, basic way to use up leftover chicken that even the fussiest eaters will eat. Maybe not something I’d make for company – it isn’t fancy – but I’d make it again for sure.
