Description

One of my favorite flavors is the taste of caramelized onions. Add some mild Italian sausage and goat cheese and the result is a pizza with a hint of sweetness. Sweet!

Tip: I rolled out the dough on a rubber pastry mat then inverted the pizza pan over the top of the circle and flipped the mat/pan over. Voila! The dough was in the pan without a bit of fuss.

Ingredients

  • ¾ pounds Sweet Italian Sausage Without Casing
  • 3 Tablespoons Olive Oil
  • 3 Tablespoons Margarine
  • 6 whole Large Vidalia Onions, Sliced Thinly
  • 2 teaspoons Salt
  • 1 package 13.8 Ounce Size, Refrigerated Pizza Crust
  • 2 Tablespoons Olive Oil For Brushing
  • 4 ounces, weight Goat Cheese Crumbled

Preparation

Preheat oven to 475 F.

Brown the sausage in a large skillet over medium heat, crumbling it as you go. Once it’s browned remove sausage from the skillet with a slotted spoon and set asode.

In the same skillet add the 3 tablespoons of olive oil and the margarine. When the margarine is melted add the onions and salt.
Stir frequently over medium-high until the onions are caramelized.

Meanwhile roll out your pizza dough to form a 12” circle. Transfer to a pizza pan (see tip above). Brush dough with the 2 tablespoons of olive oil. Top with the caramelized onions, then the sausage, then the cheese.

Bake at 475 F for 25 minutes or until done in the center and crispy on the edges.
