Luscious mozzarella all snuggled up inside a whole-wheat pita with some fire-engine-red tomatoes, vibrant green basil and super silky balsamic vinegar dressing.
1. In a large mixing bowl, combine tomatoes, cheese cubes, cucumber, spinach, basil, scallions, balsamic vinegar, oil, salt, and pepper.
2. Line pita pockets with lettuce leaves on both sides. Gently fill pita pockets with mixture from step number 1.
