Years ago, we went to a potluck in Wisconsin. Everyone was raving over a baked bean dish. It was so different and delicious. When I asked for the recipe, the busy hostess told me “Just pork and beans, molasses, brown sugar, and bacon on top…bake on low until the bacon is dark.” So, I’ve played with it over the years, and think I’ve got it!
Preheat oven to 300F
Pour beans into a large bowl. Add molasses and brown sugar. Mix well.
Pour beans into a greased 13 x 9″ baking dish. Lay raw bacon strips across top of beans to cover.
Bake at 300F for 2 to 3 hours, or until bacon is dark and beans are tender, rich and thick.
Note: Taste beans after 2 hours. Cooking too long will cause beans to become dry. Mine are usually done in 2-1/2 hours. I also use a good brand of bacon that is a bit more lean.
The salty flavor of the bacon and rich sweetness of the beans is addicting! Family and friends call them “Those beans!” and request them often.
