Slap a bib on … and get your pasta on.
In a large cast iron skillet add 1 tablespoon oil over medium high heat. Toss in chicken sausages and brown on each side, about 3 minutes total per side or until nicely browned. Remove from skillet and set aside.
Toss shrimp with Old Bay seasoning. Add 1 tablespoon olive oil to the same skillet and sear shrimp. This should take 2 minutes on the first side, then flip and cook another 1 minute. Remove from skillet and set the shrimp with the chicken sausage. Cover and keep warm.
Meanwhile cook pasta according to package directions.
Add remaining 1 tablespoon olive oil to the same skillet. Add in onions and garlic. Let them bloom 2 minutes. Add chicken stock, corn, and the remaining spices. Let simmer 5 minutes. Add cherry tomatoes and simmer another 5 minutes.
Add shrimp and chicken sausage back to the skillet. Toss pasta into the skillet and mix the whole yummy mess together.
Top with freshly grated Parmesan cheese and green onions. Enjoy.
